The Were-worms are named once in all of Tolkien's published writing, and by a hobbit who has never seen one. Stung by Glóin's doubts, Bilbo Baggins announces that he will take on whatever is asked of him — even if it means tramping all the way to the East of East and taking on the Were-worms of the Last Desert. Nothing further is told: not what they look like, not where the Last Desert lies, not whether anyone has ever met one. The entry exists because the name exists — everything else about them would be invention.
